Eggplant with Leeks and Basil

1 medium eggplant, sliced
1 leek, washed and thinly sliced
1/4 cup fresh basil, minced
1 garlic clove, minced
Dash or two of salt

Sprinkle or two of pepper
1/4 cup olive oil

Mix all in a 2-quart glass dish. Cover and microwave on high for 12 minutes. The recipe will serve three or four as a side dish.
