Baked Aubergines  with Tomatoes Parmesan

10 ounces oil
2 aubergines cut lengthwise in slices 1/2 inch thick
8 ounces cold basic tomato sauce
4 ounces mozzarella cheese, sliced
4 ounces grated parmesan cheese
12 fresh basil leaves

1. Preheat oven to 375

2. Heat oil and fry the sliced aubergines until golden brown. Drain well on kitchen paper.

3. Cover the bottom of an 8 inch baking dish with about 2 tablespoons tomato sauce. Arrange a layer of aubergines on top, all pointing the same way.

4. Cover with a layer of mozzarella, a layer of tomato sauce, a layer of parmesan cheese and a few torn basil leaves. Repeat two or three times, ending with a thickish layer of tomato sauce and plenty of cheese and basil.

5. Bake in the oven for 20-25 minutes. Serve cold or just warm.


should it go with white sauce instead of tomato sauce
