Baby Eggplants with Roasted Tomatoes, Feta Cheese, and Broiled Scallions

9 baby eggplants
freshly ground sea salt and pepper to taste
dash of tabasco sauce
1 teaspoon balsamic vinegar
1 bunch scallions, trimmed
1/2 yellow bell pepper
6 medium ripe vine tomatoes
1 1/2 cloves garlic, crushed
1 1/2 cups fresh breadcrumbs
1/2 cup olive oil
1 tablespoon chopped fresh coriander
1 cup feta cheese, cut into tiny cubes
15 whole roasted garlic cloves
1 tablespoon fresh coriander leaves, stalks removed

Heat the oven to 325.

Cut the baby eggplants in half, sprinkle with a little salt and Tabasco and balsamic vinegar. Place under a very hot broiler for 4-5 minutes until golden brown and soft inside. Transfer to a plate and set aside.

Add the scallions to the broiler pan, baste with the pan juices, and broil for 3-4 minutes, turning at least once to make sure they don't burn.

Broil the yellow bell pepper until charred on all sides, remove the skin and cut into rough 1/2 inch squares.

Place the tomatoes on a cookie sheet with 1/2 teaspoon crushed garlic and a little salt. Bake in the oven for about 1 hour.

Mix the breadcrumbs with 2 tablespoons of olive oil, the remaining crushed garlic clove, and the chopped coriander. Increase the oven temperature to 425. Place the breadcrumb mixture on a cookie sheet and bake for 6-7 minutes until a pale golden color.

To serve, place a roasted tomato (served hot or cold) in the center of an individual plate. Prop three halves of eggplant around it and arrange feta cheese cubes around the edge. Scatter yellow bell pepper pieces here and there. Place 1 scallion on one side and sprinkle lightly with the toasted breadcrumbs. Finally, garnish with the roasted garlic cloves and a few coriander leaves strewn at random and drizzle a little olive oil over the top.

How big should the aubergines be. i.e. size. I mean I call a baby aubergine about 5cm in diameter, if so I must be doing something wrong cos theyv'e been in the oven for 45 mins now and are only just going soft Where does it sy about roasted garlic in instrructions

This sounds like a lot of food! I love the ingredients, although I don't know where to get coriander leaves...any ideas? Cooking the baby eggplants right now. I have the peppers etc since I just did shopping at the Farmer's Market here locally. I think the eggplant would not cook that fast however, so I am cooking them in olive oil and butter right now on the stove (with garlic). Am excited about all these recipes with eggplant and hope to find one I can use to make a casserole for Thanksgiving for my family (most of whom don't eat eggplant). Hoping they won't even know it is eggplant until after they say they like it...with cheese on the top and bread crumbs...maybe I can get away with it. I love moussaka and want to make something like it similar to what I had in a restaurant one time and just loved it!
