Baby Eggplant Appetizer with Chervil

1 teaspoon chervil, chopped
2 tablespoons olive oil
1 cup baby eggplant, sliced
1 cup baby zucchini, sliced
1/2 cup roma tomato, chopped
mozzarella cheese, optional

Brush eggplant and zucchini slices with olive oil. Place in baking dish.

Toss Chervil and tomato and place a spoonful of mixture on each slice of eggplant and zucchini. Brush with oil.

Bake in a 350 degree oven for 10 minutes or until fork-tender.

Garnish this appetizer with Mozzarella cheese for extra-special flavor.
