Baba Ghanoush (version XVII)

Baba Gannouj,Baba Ganoush,Baba Ghanouj,Baba Ganouj,Baba Ghanooge

1 large eggplant
1 clove garlic, crushed
2 tablespoons tahini (sesame seed paste)
2 tablespoons lemon juice
1/2 teaspoon salt
2 tablespoons olive oil

1. Remove the eggplant's stem and poke all over with a fork. Place on a cookie sheet and bake at 350 degrees for 45 minutes. Cool thoroughly.

2. Scoop out the eggplant flesh and put in a food processor or blender with the garlic, tahini, lemon juice, salt, and olive oil. Puree until smooth.

Use as a dip for pita or spread on vegetarian sandwich.

Makes 2-1/2 cups.
