Eggplant Fritters (version V)

1 large eggplant, peeled, diced, boiled and drained
1 egg
1 pinch baking soda
salt and pepper
flour
oil for frying

Add egg to eggplant; add soda, salt and pepper. Add enough flour to make a thick batter. Drop by tablespoon into hot oil. Brown on both sides and drain.
