Eggplant Dip (version IV)

1 medium eggplant, sliced thinly
1 or 2 red onions, thinly sliced
2 or more tomatoes, sliced
salt
pepper
garlic

Lay eggplant slices on sprayed baking sheet. Cover with onion slices, then with tomato slices. Bake about 1/2 hour at 350, till tender. Cool slightly, and blend. Season to taste. Serve with crackers.
