Eggplant Casserole (version V)

1 large eggplant
1 orange pepper
1 green pepper
1 medium red onion
chopped chives
1 medium zucchini
2 tomatoes, medium
bread crumbs
vinegar (homemade flavored or  balsamic)
6-8 garlic cloves
1 can  spaghetti sauce
onion salt, oregano, other italian spices to taste
mozzarella

Slice the eggplant and place on a plate. Sprinkle with balsamic  vinegar (or homemade oregano or garlic vinegar) and micro wave for about 6-7 minutes to soften.

Coat with breadcrumbs mixed with the spices. Place them in a large baking dish, and cover with chopped peppers, chives, sliced zucchini, sliced tomatoes, onions and garlic cloves .  Pour the spaghetti sauce over the top and sprinkle with oregano Bake for about 1 hr. at 350 degrees.
