Eggplant Casserole (version III)

1 eggplant, cubed, unpeeled
3 ounces grated american cheese
salt and pepper to taste
1 tablespoon margarine or butter
1/3 cup water

Stir together eggplant and cheese. Add salt, pepper, margarine and water . Mix well. Place mixture in casserole and bake at 350 degrees for 35-45 minutes in oven.

Serves 3-4.
