Eggplant and Tomatoes over Rice Noodles

1 eggplant (cubed to 1/4 - 1/2 inch cubes)
1 can tomatoes chopped
1/2 package rice noodles (glass noodles) - precooked
salt, optional

In microwave container, layer eggplant, salt, tomatoes, and rice noodles in that order. Microwave high until eggplant is to taste - it takes me 10 minutes on high. Mix everything and enjoy.

Variation: Use sticky rice instead of the noodles.
