Deep-Fried Eggplant with Sweet Soybean Paste
Beinasu no dengaku
1 japanese eggplant
sesame oil
Sweet Soybean Paste
2 tablespoons miso
2 tablespoons sugar
1 tablespoon mirin
1 tablespoon sake
Make Sweet Soybean Paste by boiling the ingredients until it is a thick sauce.
1. Wash eggplant and cut lengthwise into two.
2. Heat oil to 170 degrees, and deep-fry eggplant for 3-4 minutes.
3. Make a sweat soybean paste.
4. Spread sweat soybean paste on eggplant.
