Crispy Eggplant

1/2 cup breadcrumbs
1/2 cup wheat germ
1/4 teaspoon salt
pinch cayenne
1/4 teaspoon basil
1/4 teaspoon oregano
1 eggplant
1/2 cup grated mozzarella cheese
2 beaten eggs

1. Preheat oven to 350°F. Grease a cookie sheet and set to one

2. Combine breadcrumbs, wheat germ and seasonings.

3. Dip slices of eggplant into the beaten egg then into the breadcrumb
mixture. Transfer to cookie sheet.

4. Bake for 20 minutes.

5. Remove from oven and sprinkle grated cheese over top. Return to
oven until brown.
