Eggplant Creole (version III)

1 large eggplant
2 tablespoons flour
2 tablespoons butter
1 (15 ounce) can tomato sauce
1 can water
1 clove
2 bay leaves
1 bell pepper, chopped
1 onion, chopped
1 teaspoon salt
1/2 cup grated cheese
1/2 cup bread crumbs

Preheat oven to 350 degrees.

Cut eggplant in cubes; cook in boiling water for 8 minutes; drain.

Place butter and flour in skillet; when blended, add tomato sauce and water; stir until smooth. Add clove, bay leaves, bell pepper, onion and salt.

When sauce thickens, fold in eggplant and sprinkle with cheese and bread crumbs.

Bake for 1/2 hour at 350 degrees.

A delicious recipe, very easy to prepare. I was doubtful when I made it thinking it would not be enough, that I needed meat to go along with it. However, with a simple salad and some stick bread it more than amply sufficed.

Not bad at all for something so easy to prepare. I used red instead of green peppers. I also prepared the eggplant a day ahead so the whole dish was even easier to make when I came home.

I never liked eggplant but my husband does. I started experimenting with some of the recipes on this site to give him a little variety. Well if you cook, you gotta taste! I am a convert, especially after this recipe. Delicious.

Delicious and easy recipe. I adapted this recipe to keep it healthy/low fat, and it was still delicious. Try adding some crumbled tofu prior to putting in the oven. Helps to increase your protein intake. My picky family enjoyed it and went for seconds.

try adding bacon to the mix, it's delicious. 2 strips is fine to flavour the whole pan.... au gratin the top with a mix of cheddar and mozza, half and half for the best effect. look for the recipe in the Joy.
