Eggplant Fritters (version VIII)

1 eggplant soaked in sugar water
3/4 cup flour
1/4 cup milk
3/4 teaspoon salt
dash pepper
1/2 teaspoon baking powder
cinnamon sugar for dusting

Peel and dice eggplant and soak in sugar water; drain well.

Place in skillet WITHOUT water or butter, cover and simmer slowly until tender.

Mash, then add it to the rest of the ingredients already mixed together.

Cook as fritters in hot oil until golden on each side.

Sprinkle with cinnamon sugar.

Makes: 4 -6 servings
