Smoked Eggplant Risotto

1 pound Italian rice Arborio
1 onion chopped
2 cloves of garlic, chopped
2 tablespoon
olive oil
1 eggplant smoked in a smoker with apple chips and diced
1/2 cup dry white wine
salt and pepper

Sauté onion and garlic in olive oil then add risotto and eggplant add white wine then salt and pepper. The rice should be firm yet cooked through in 18 to 20 minutes total cooking time.
