Caramelized Eggplant

4 tablespoons peanut oil
1 large eggplant, peeled and cut into French-fry strips
1/4 cup packed brown sugar

Add peanut oil to the pan and heat over high heat until smoking. Add the eggplant and sauté until charred, about 10 minutes. Sprinkle with the brown sugar, toss, and cook until tender, about 2 minutes longer.

Serves 4
