Roasted Vegetable and Haloumi Cheese Bruschetta
4 slices Turkish bread or similar
Place half of the olive oil in a fry pan and heat. Add Turkish bread and warm, turn and repeat. Set aside. Add remaining oil, place sliced eggplant in and grill on both sides. Place the grilled eggplant on the toasted bread.
2 tablespoons Olive oil
2 cloves garlic, thinly sliced
1 small eggplant, sliced
2 large tomatoes, sliced
2 tablespoons basil pesto
1 tablespoon Kalamata olives, pitted and sliced
1/4 bunch basil, chopped
Haloumi cheese, sliced
Scatter the sliced garlic over the eggplant, top with sliced tomato. Add sliced haloumi cheese to the fry pan and gently grill, add cheese to sandwiches.
Garnish with sliced olives and chopped basil.
