Sensational Sandwich

red and yellow bell peppers
eggplant
zucchini
onions,
portabella mushrooms
carrots
olive oil
3 tablespoons balsamic vinegar
1/2 cup olive oil
1 tablespoon Dijon mustard
salt and pepper to taste
1 teaspoon thyme
1 teaspoon sumac
1 clove garlic, crushed
pita bread
mozzarella cheese slices
Marinade
3 tablespoons balsamic vinegar
1/2 cup olive oil
1 tablespoon Dijon mustard
1 teaspoon thyme
1 teaspoon sumac
1 clove crushed garlic
salt and pepper to taste

Cut the vegetables long and thick, and toss with a little olive oil. Place on grill or pan sear them.

Marinade Whisk the ingredients and then toss the vegetables together with this marinade.

Just fill the pita bread with the vegetables and thick slices of mozzarella. Place on grill and cook until the cheese oozes out the sides.
