Chinese Eggplant Stir
2 chinese eggplant, peeled and cubed
1 zucchini, thinly sliced
1 green bell pepper, cut in strips
2 shallots, sliced
3 tablespoons french salad dressing
2 cups cherry tomatoes
Place 2 Chinese Eggplant, peeled and cubed, 1 zucchini, thinly sliced 1 green bell pepper, cut in strips, 2 shallots, sliced and 3 tablespoons French salad dressing into a skillet.
Stir lightly to combine and cook over low heat until tender.
Stir in 2 cups cherry tomatoes and cook for an additional 3-5 minutes
Makes 4 servings.
