Szechuan Barbecued Eggplant

12 pounds eggplant, stems removed
3 cups peanut butter
2 cups soy sauce
1/4 cup garlic powder
2 cups water

Slice eggplant into 1/2-inch thick slices. Place each slice on aluminum foil square.

Combine the rest of the ingredients in small bowl. Mix well. Brush mixture over each eggplant slice. Wrap each portion in foil. Cook on preheated medium-high grill for about 6 minutes on each side. Serve in the foil or unwrap.

Yield: 50 4 ounce portions
