Deep Fried Eggplant (version II)

1 large eggplant
salt and pepper to taste
1/4 cup all-purpose flour
1 egg
2 tablespoons water
1/4 cup fine dry bread crumbs
oil for deep frying

Peel eggplant; cut into 1/4-inch thick sticks. Sprinkle with salt and pepper, roll in flour then dip into egg beaten with water. Roll in crumbs then fry in hot oil at about 375º until golden brown. Transfer to paper towels to drain and serve immediately with a dip, if desired.
