Grilled Eggplant and Sweet Red Pepper Focaccia Sandwich

1 sandwich-size wedge of focaccia
1 tablespoon purchased basil pesto
1 tablespoon mayonnaise
2 slices grilled eggplant
2-3 wedges grilled sweet red or yellow bell peppers
salt and freshly ground pepper, to taste

Slice the wedge of focaccia in half horizontally. Combine the pesto and mayonnaise and spread on the bottom slice of focaccia. Top with the eggplant and peppers. Sprinkle with salt and pepper, if desired. Cover with top wedge. Wrap ready for the lunch box. Refrigerate until ready to eat.
