Briami (version IV)

1 large eggplant
1 large bell pepper
2 onions
4 medium potatoes
3 spring onions
4 cloves of garlic
2 medium zucchini
1 medium sweet potato
2 ripe tomatoes
1/2 cup chopped parsley
1/4 cup of olive oil
salt and pepper
a pinch of dried oregano
1 can crushed tomatoes

Chop vegetables about the same size. Mix in garlic (whole), parsley, salt and pepper, oil and crushed tomatoes. Mix well and put in baking dish. Bake in hot oven, stirring every 15 minutes, for one hour. When cool add more parsley.
