Bean Casserole

1/2 cup cannellini beans
1 onion
2 cloves garlic
1 red bell pepper, diced
1 yellow bell pepper, diced
1 eggplant, diced
6 tomatoes diced, or 28 ounces canned crushed tomatoes
2 zucchini, diced
1/2 bunch basil

Soak beans overnight. Boil beans for 3/4 - 1 hour. Rinse under cold water and reserve

Sauté the onion and garlic until soft, but not browned. Add and sauté eggplant and bell pepper. Add the tomatoes, cooked beans and the basil. 5 minuntes before serving add the zucchini.
