Excellent Eggplant Side Dish

1-2 large eggplants
8-10 mushrooms
2 onions
2-3 tomatoes
2 cloves garlic
2 tablespoons honey
1 tablespoon soy sauce
1/4 can of beer

Chop up veggies in small or large chunks depending on your preference. Sauté the garlic then add all the vegies and cook for about 10 minutes. Add the honey, soy sauce and beer and simmer for around 15 minutes on low heat with the lid off. If you want to break the vegies down to form a thick sauce you can simmer for longer and then mush up the mixture.
