Simple Mexican Eggplant

1 medium (1 pound) eggplant, peeled and cut into cubes
4 medium fresh tomatoes, peeled and chopped
1 garlic clove, minced
2 tablespoons chopped onion
1/2 teaspoon chili powder
dash pepper

Combine all ingredients in skillet and simmer gently 15 to 20 minutes or until eggplant is tender. Great with tortillas!
