Linguine with Ricotta, Eggplant, and Basil
1/2 cup olive oil
Cook eggplant in olive oil 3-4 min. Add garlic and red pepper, cook 2-3 minutes. Add red pepper flakes, ricotta, basil, salt and pepper. Serve over linguine, garnish with nuts and parmesan.
1/2 cup eggplant; peeled, salted, and drained
1/4 teaspoon garlic, chopped
1/2 sweet red pepper
4 ounces fresh egg linguine, cooked
1/4 teaspoon hot red pepper flakes
1/3 cup ricotta
2 tablespoons fresh basil, chopped
salt and pepper
2 tablespoons pine nuts
2 tablespoons parmesan
Makes 1 serving.
I would like to try this but 1/2 cup olive oil for one serving??? Jeez! Did you know that just one tbsp of olive oil has 14 grams of fat?
Why would you post a recipe for one serving; who makes a meal for one these days. So annoying!
