1 pound boiled whole wheat, sesame, artichoke or spinach noodles
Boil the noodles.
1/4 cup butter or margarine
2 bell peppers, diced
5 tomatoes, cut into wedges
2 zucchinis, sliced
1 eggplant, diced
1 cup celery, diced
1 cup string beans, chopped
1/4 teaspoon black pepper
1/2 teaspoon cumin powder
1/2 teaspoon asafetida
1 teaspoon chili powder
1 tablespoon soy sauce
2 tablespoons fresh parsley, chopped
1 cup homemade tvp (see p. 383) or soaked granburger (about 1/2 cup dry)
3 cups sour cream
1/2 cup nutritional yeast
In the meantime, sauté the next 7 ingredients or use other assorted vegetables to make about 12 cups chopped vegetables. When vegetables are translucent, add next 7 ingredients and sauté a few minutes longer.
As soon as the eggplant is cooked, add the last 2 ingredients as well as noodles that have been boiled and drained. This makes a whole meal served with a crisp, fresh salad.
