Spicy Eggplant

1 eggplant (sliced)
1 red chili (sliced)
1 yellow bell pepper (chopped)
1 clove garlic
1 shallot
1 teaspoon olive oil
1 tablespoon vegetable stock
salt and pepper to taste
pinch sugar

Heat oil in pan, throw in the shallot (chopped) and garlic (minced) sauté until soft. Throw in the eggplant and red chili. Stir fry for a couple of seconds then throw in the yellow capsicum. Let the ingredients mix well, then add vegetable stock. Let the ingredients absorb the stock and then add whatever salt and pepper you may require. Add sugar and stir ingredients until the eggplant is almost falling apart. Serve with rice.
