Ratatouille

1 cup fresh sliced mushrooms
1 large onion chopped
2 medium zucchini, 1/4 inch slices
2 large green peppers sliced
3 cloves garlic chopped finely
1/4 teaspoon sweet basil
1/4 teaspoon oregano
4 medium tomatoes peeled and chopped
1 medium eggplant peeled and cubed
parsley to taste

Sauté mushrooms, onions, zucchini, garlic and green peppers. Don't brown Add remaining ingredients Cover and simmer for 20-25 minutes. If necessary add a little water to keep mixture from sticking To serve, top with sliced ripe olives Serve hot or chill and serve cold as a first course. Also an excellent filling for crepes
