Pizza al Melanzane
1 large eggplant
Cut the eggplant in slices, lace with olive oil and bake for 8 minutes at 400 F
5 cloves garlic
2 packages feta cheese
4 teaspoons tomato paste
some tomato puree
15 fresh basil leaves
2 fresh tomatoes
chili (or other hot) sauce
3 spring onions
Roll out the pizza dough. Dice the onions and press the garlic. Stir fry.
Mix one package of feta with the tomato paste/puree. Mix with the onion/garlic and spread on the dough. Cut the rest of the feta in slices and spread on the pizza. Put the eggplant slices on the pizza. Season to taste. Add some olive oil .
Bake at 450 F for 15-20 minutes. Then add the fresh tomatoes (slices) and the chopped basil.
