Oven Fried Sesame Eggplant
3/4 cup saltine cracker crumbs (12 double saltine crackers)
1. Preheat the oven to 400 degrees. Grease a baking sheet.
1/2 cup grated parmesan cheese
1/4 cup sesame seeds
1/4 teaspoon pepper
1 medium eggplant (about 1 1/4 pounds)
2. Stir the cracker crumbs, cheese, sesame seeds, and pepper together in a small bowl.
3. Cut off the stem and cap and peel the eggplant. Slice l/2-inch-thick. Spread both sides of each slice with mayonnaise. Dip each side into the crumbs, pressing lightly to adhere. Place them on the prepared baking sheet.
4. Bake for 10 to 12 minutes or until the undersides are golden. Turn the slices over and bake 5 to 7 minutes longer, or until they are golden on both sides.
I will try this recipe again, but will make some changes. My taste buds are 65 years old, and I do believe they change as we age. This recipe reminded me of fried green tomatoes in texture. The next time I try it, I will add some cayenne or spicy dried garlic (or both) to the dry ingredients and I will also toast the crumbs and parmesan before patting it on the eggplant. I might even try crushed corn flakes or corn meal. I am learning to love eggplant. It makes a nice alternative to potatoes.
