1 cup flour
Sift dry ingredients together. Combine milk and eggs; beat into dry mixture. Dip eggplant into batter and fry in oil at 375F until golden brown. Drain on paper towels, serve warm.

I love eggplant prepared this way. I arrange 4 slices ontop of fresh mixed greens with a balsamic vinaigrette. A great lunch!!!

Don't be timid with the pepper... and in that regard, don't think pepper is the only thing you can put in the batter. We put a healthy dose of dried basil, oregano, and thyme. It was delicious, so we used the rest of the batter up on some onion rings. yumm!
