Armenian Eggplant Casserole

1 large eggplant
1 green pepper, diced
1/2 clove garlic, finely minced
1 medium onion, sliced
sour cream (optional sauce)
4 medium tomatoes
1/4 cup olive oil
pepper, freshly ground
1 1/2 teaspoons salt

Pare and dice eggplant. Heat oil in skillet, add onion, green pepper, and eggplant. Stir over low heat until eggplant is soft. Add tomatoes (may substitute canned Italian solid pear shape, drained), salt, and pepper. Simmer a few minutes. At this point you can add basil, chives, parsley, tarragon or oregano to taste.

Turn into casserole dish and bake at 325 degrees for 40 minutes.

Casserole may be served hot or cold, with sour cream.


This is my favorite dish! I've been serving it for years. I don't add the sour cream, though: my family and I think it's perfect without it. You can have some on the side for those who want it! Do try it!

I believe this recipe should say 1 1/2 teaspoons of salt, instead of tablespoons. It's awesome with the sour cream but still very good without.

I love this dish! We make it often and my 1 yr old and 3 year old even love it. I've shared it with friends, one put some sausage in it which was yummy. Try it, it's easy and delicious. Also freezes well for lunches or quick meals!!

this is good , plus a good basic receipe to have on hand for whatever, this could also be cooked with chiken broth, cheese added, bread crumbs, you could add meat , ( i think something spicey, ) even sea food... I added cumin, and nutmeg and upped the garlic. plus all the ingrediants except the salt and cumin and nutmeg came right out of my garden!

I just cooked up some small eggplants I got a the Farmer's market (with some garlic in olive oil and butter)and also put a few tiny potatoes in there too. This recipe sounds good, although I usually cook eggplant with lemon, mint, olive oil, and garlic. Sounds good and enjoyed the other comments. Like the bread crumb idea too. Also, I like feta cheese but even mazarella might be good.
