Baked Sliced Eggplant

1 eggplant
1/3 cup melted butter
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup bread crumbs

Cut eggplant, crosswise, into 8 1/2-inch slices and peel. Brush each slice with melted butter. Add remaining melted butter, salt, and pepper to crumbs. Dip slices into buttered crumbs. Bake, uncovered, on baking sheet in a 450 degree oven 18 minutes.

Serves 4.


This was the BEST recipe that I've tried and so very easy. I prepared it ahead and put it in the frig. - then all I had to do was to slip it into the oven for 20-25 minutes. My family raved about it. Because of a low sodium diet, I used Japanese Style Bread Crumbs. Also, I didn't peel the eggplant since it looks much prettier unpeeled.

Great recipe. I tried it a couple of times and the last time I put it in a 350 degree oven with other food and cooked for 20 minutes. Came out great.

Easy, delicious, add tomato slices with salt, pepper, olive oil and basil on the plate; beautiful!
