Grilled Eggplant Parmesan

1 large eggplant, peeled and cut into -1/4-inch slices
1 cup italian dressing
2 tomatoes, thinly sliced
1 cup mozzarella cheese
1 cup marinara sauce

COAT eggplant slices with dressing.

ARRANGE eggplant slices in a single layer on a cookie sheet or place on greased grill over medium coals. Broil or grill for 8 minutes on each side or until lightly browned.

PLACE 1 layer of eggplant slices in a 9x5-inch baking dish. Top with tomato slices. Evenly top with cheese and marinara sauce. Bake at 350°F for 30 minutes until heated through.

Serve immediately.
