your choice of grinder or sandwich rolls
butter, margarine or olive oil
4-5 cloves garlic
salt and pepper
Crush the garlic and add it to the olive oil, butter or margarine. Use enough oil to brush all the vegetables for grilling. Remember, the eggplant will really suck up the oil. Brush all the veggies with the garlic oil mixture and salt and pepper. Grill the eggplant, red peppers and tomatoes until done.
Brush the cut halves of the bread with the garlic oil mixture and grill until nicely toasted.
Stack eggplant, pepper then tomatoes on the bottom half of bread and top with top half.
