Grilled Eggplant (version III)

2 eggplants, preferably japanese
soy sauce or mixed soy sauce and mirin
ginger

1.Wash eggplant, grill in the toaster oven (800W) for 15 minutes until peel become crisp.

2.Soak grilled eggplant in the cold water and peel.

3.Cut into 2 inch, arrange on serving plate, pour soy sauce or mixed soy sauce and mirin.

Garnish grated ginger.
