Blend of Mixed Vegetables

1 eggplant (unpeeled/cubed)
1 potato, peeled/cubed
2 to 3 stalks of celery (cut in 2
1 garlic clove, chopped
1 to 2 medium zucchini (scrubbed/cubed)
1 green pepper, cubed
1 onion, chopped
2 to 3 cups marinara sauce

Heat marinara sauce, add the potato and celery. Cook 15 minutes, then add the zucchini, pepper, onion and garlic. Cook until tender about 15-20 minutes longer.

Serves 4.
