Fried Eggplant Fingers

1 eggplant cut in finger long strips
2 eggs
1/2 cup milk
1/2 cup flour
1/4 teaspoon black pepper
1/4 teaspoon white pepper
italian bread crumbs
oil for frying
tabasco to taste

Salt eggplant fingers and let sit in colander for 20 minutes. Rinse and dry well. Dip fingers into flour. Then into a dip mixture of the eggs, milk, and Tabasco. Dip into bread crumbs. Deep-fry slowly on both sides.
